Baked Salmon with a Blue Cheese Cream on a Leek and Garlic Mash

On occasion, when dinner approaches, we have no plans and end up looking in the fridge, freezer and pantry to come up with something. That is what happened to create this dish and it turned out awesome! This dish has a baked salmon that is very mild accompanied by a blue cheese sauce. The leek and garlic mash the salmon rests on is very tasty!

Baked Salmon with a Blue Cheese Cream on a Leek and Garlic Mash

Ingredients

  • 4 filets salmon
  • 1 lemon
  • tsp thyme
  • 3 tbsp oil
  • 1/3 cup blue cheese
  • 2/3 cup heavy cream
  • 6 medium potatoes
  • 3-4 leeks
  • 6 garlic cloves
  • 1/3 cup butter
  • 1/2 cup milk

Instructions

  • Spread the oil on a baking sheet. Place the salmon on the sheet. Sprinkle the thyme and lay thin slices of lemon on the fish. Bake at 400 for 20 minutes.
  • Peel and boil the potatoes until tender. Smash the garlic and thinly slice the leeks and wash them thoroughly. In a skillet, melt the butter and saute the leeks and garlic. Mash the potatoes and mix with milk, leeks and garlic.
  • In a saucepan add the heavy cream and blue cheese. At medium low heat melt the cheese and stir until smooth.
  • To plate, spread some of the mash on a plate. Lay the salmon on the mash and pour some of the blue cheese cream sauce on the fish.
