Beef Stroganoff

Beef Stroganoff is a Russian dish that features sauteed cubed beef in a sour cream based sauce served on noodles. Over the years it has spread in popularity around the world and there are countless variations. In this version I use ground beef, a few vegetables and egg noodles. I love how tender egg noodles are and they also can go great in chicken noodle soup! The wonderful thing about this dish is that it can feed a family at a low cost, so if you are on a tight budget, this is a great meal to add to your rotation!

Beef Stroganoff

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Servings: 4

Ingredients

  • 2 pounds ground beef
  • 1 green pepper , diced
  • 1 onion , diced
  • 1 1/2 cup sliced mushrooms
  • 2 cloves garlic , minced
  • 1 tbsp flour
  • 1 tbsp worcestershire sauce
  • 1 tsp paprika
  • 1/4 tsp thyme
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup water
  • 1 1/2 cup sour cream
  • 1 package broad egg noodles

Instructions

  • Brown the beef in a large saucepan. Drain the grease and then add the vegetables and minced garlic. Saute until the vegetables are tender, approximately 5-7 minutes.
  • Stir in the flour and spices and cook for another 2 or 3 minutes.
  • Pour in the water and bring the stroganoff just to the boiling point. Lower the heat to a simmer and cook for 5 more minutes.
  • Stir in the sour cream and heat for a few minutes. The sauce should thicken nicely.
  • Serve on egg noodles.

  • My husband loves this dish. I love that it is cheap and easy. Great for a nice hearty dinner, especially in the winter. Cannot wait till the weather cools off so we can enjoy it again.
