Pulled Pork Nachos

These just might be the ultimate nachos! Smoky flavour from the pulled pork with peppers, onions and lots of cheese piled all over tortilla nacho chips. Baked in the oven or on a grill.

Leftover pulled pork?!? Is that even possible? Pulled pork is great to throw into other dishes. It is smokey and delicious. A couple days ago I posted a recipe for Pulled Pork Jalapeno Poppers and today I get to share these pulled pork nachos with you. I threw them on my new pizza stone and cooked them on the grill. Pulled pork makes everything better!

Anytime I make pulled pork, whether it is in the smoker, crock pot or pressure cooker, I often like to make lots. Pulled pork never goes to waste, and here are some other recipes for how I like to use pulled pork.

If you are wanting to make some pulled pork, here are a few different recipes and methods for making the pulled pork. You can use either a pork shoulder, butt or picnic roast.

How long to cook nachos

Assemble the nachos on either a pizza stone or a baking sheet. Both work well. I usually spread a couple layers of nachos. First, evenly place some tortilla chips on the pizza stone or baking sheet. Then sprinkle diced onion, pepper, pulled pork and cheese on the chips. Spread another thin layer of tortilla chips on top followed by more onion, peppers, pulled pork and cheese.

Both the oven and the grill are excellent for baking nachos. I do find that the pizza stone works better on the grill because it protects the nachos from the flames more than a thin baking sheet will be able to do.

Preheat either the grill or oven to 400F. Once it has been preheated, add the assembled nachos. If using the grill, make sure to close the lid since you are wanting the nachos to bake. The nachos will be cooked in about 15-20 minutes. The cheese will be melted and bubbly in spots and the onions and peppers should be soft and tender.

Ingredients

  • 1 bag tortilla chips , around 11oz/320g in size
  • 2 cups pulled pork
  • 1 onion , diced
  • 1 red pepper , diced
  • 2 cups grated cheese (cheddar and/or monterey jack)

Instructions

  • Preheat grill or oven to 400F.
  • Spread tortilla chips on a baking sheet or pizza stone.
  • Sprinkle diced onion, pepper, pulled pork and grated cheese on the tortilla chips.
  • Place in the oven or on the grill for about 15-20 minutes or until the cheese is melted and the onions and peppers soften.
  • Serve hot.
