Raspberry Crumble Bars

I need to make a confession. I look for any opportunity to make oat crumble. The combination of oats, brown sugar and butter – they all work together to make something sweet, crunchy, and totally delicious.

So, after I picked a bunch of raspberries at Millar Berry Farms, I knew that I was going to make some sort of raspberry crumble. These are quite similar to the way that I make apple crisp, but, the middle is with raspberries instead of apples.

Mixing the fresh berries with a little flour and sugar turn the middle into something similar to a fruit pie filling.

These crumble bars have a wonderful combination of sweet and tang. Once made, they can be cut and then frozen for a couple months. That is a great way to store them if they do not all get eaten right away. They are that good!

Ingredients

  • 2 cups flour
  • 2 cups oats
  • cups brown sugar
  • 1 tsp baking powder
  • 1 cup melted butter
  • 2 pints (4 cups) fresh raspberries
  • 1/2 cup white sugar
  • 2 tbsp flour
  • 2 tbsp lemon juice

Instructions

  • Preheat oven to 350F.
  • Mix the flour, oats, brown sugar and baking powder in a bowl. Stir in the melted butter until it forms a wet crumbly consistency.
  • Take about two thirds of the crumble mixture and dump it into an ungreased 13x9 pan.
  • Mix together the raspberries, sugar, flour and lemon juice so the raspberries are well coated.
  • Spread the raspberry mixture evenly across the crumble base.
  • Sprinkle the remaining crumble mixture evenly on top.
  • Place in the oven and bake for 30-40 minutes.
  • Cool on a wire rack and then cut into squares.

    Delicious, but if I make again will definitely grease the pan or use parchment paper as they stuck terribly.

    This was so easy to make, and didn’t take very long! The only thing I did different was I used quick oats and it turned out fine! I chose to keep in the refrigerator. It made it easier for me to cut and spatula out and I like it firmer. I did eat it with a fork though. It would be a great with ice cream on top as well. Will be making again.

    These were amazing! We have a couple of GLUTEN FREE people in our house so I used Bob’s Red Mill 1 to 1 GF flour and the bars were perfect! Thank you for this recipe.

  • Hi. I just prepared it. Going to bake it today and serve it tomorrow. I hope it will taste good after staying in refrigerator. My raspberries usually go bad on the vine but this year I m making sure I use them. I will let you know how it comes out.

    Do you recommend quick oats or old-fashioned? Or does it make a difference?

    • For baking, I generally find that old fashioned or rolled oats are better than quick oats. Hope that helps.

      I used quick oats and the bars turned out ok, but not great. The texture was off.

  • Where I’m from we don’t have fresh raspberries, can the frozen ones be used

    • I have tried them and the bars turn out okay, but they can be a little extra runny. I have thawed the berries and drained any excess liquid which did help.

        • After they are baked, I have stored them in the freezer and the result has been quite good. Still tastes amazing.

    OMG these are seriously good! The best dessert I have eaten in a long long time. I didn’t change a thing, other than adding vanilla ice milk (soft serve). That took it to another level… I have beautiful rambling raspberries growing. Thank you for this awesome recipe… 🙂

    I made this but used “Harvest Crunch” instead of oatmeal. It said to use an ungreased pan. It stuck like glue!!! I would do it again but would definitely grease the pan!

  • Sadly, I didn’t have enough raspberries to make a whole recipe so I had to cut it in half, then I used an 8×8 baking dish so I think they were a little thicker than they were supposed to be but OMG, so good. They didn’t make it over an hour, the family devoured them. This is a great recipe and I will definitely make them again only next time I’ll make sure I have enough raspberries for the full recipe.
