Baked Salmon with a Blue Cheese Cream on a Leek and Garlic Mash

Ingredients
4filets salmon
1lemon
tspthyme
3tbspoil
1/3cupblue cheese
2/3cupheavy cream
6medium potatoes
3-4leeks
6garlic cloves
1/3cupbutter
1/2cupmilk
Instructions
Spread the oil on a baking sheet. Place the salmon on the sheet. Sprinkle the thyme and lay thin slices of lemon on the fish. Bake at 400 for 20 minutes.
Peel and boil the potatoes until tender. Smash the garlic and thinly slice the leeks and wash them thoroughly. In a skillet, melt the butter and saute the leeks and garlic. Mash the potatoes and mix with milk, leeks and garlic.
In a saucepan add the heavy cream and blue cheese. At medium low heat melt the cheese and stir until smooth.
To plate, spread some of the mash on a plate. Lay the salmon on the mash and pour some of the blue cheese cream sauce on the fish.
