Ingredients
1cupbuttersoftened
1cupground pecans
3/4cupicing sugar
2 1/2tspvanilla
2cupsflour
2cupsicing sugar
Instructions
Add the butter, 3/4 cups icing sugar and vanilla to a large mixing bowl. Beat with an electric mixer until smooth and creamy. Add in the pecans and beat until well combined.
Add the flour and beat at a slow speed. Increase the speed slowly as the flour gets incorporated into the cookie dough.
Roll the dough into 1 1/4 inch balls and place on a non stick baking sheet or one lined with parchment paper.
Bake in a 350F oven for 12-15 minutes.
Remove from the oven and let the cookies cool just a little bit. While they are still warm, gently roll the cookies in the remaining 2 cups of icing sugar. Let cool on a wire rack.
Before serving toss one more time in some more icing sugar.
