These fluffy pancakes have pumpkin puree and spices and are fun to decorate into a jack-o-lantern. Great for Halloween and fun for kids!

Ingredients
1cupsifted flour
2tspbaking powder
1/2tspsalt
1tspcinnamon
1/4tspground ginger
1/4tspnutmeg
1/8tspground cloves
1/8tspallspice
1/2cuppumpkin puree
1cupmilk
2egg yolks
2tspmolasses
1tbspbrown sugar
2egg whites
icing sugar
nutella(optional)
Instructions
In a blender, mix the pumpkin puree, milk, egg yolks, molasses and brown sugar until it is a smooth consistency.
In a large bowl sift together the flour, baking powder and spices together. Pour in the wet ingredients and, using a whisk, stir until just combined.
With an electric mixer, beat the egg whites until stiff peaks form. Fold the egg whites into the batter gently until the lumps are gone.
Make a jack-o-lantern stencil with the lid of a margarine container and an x-acto knife.
Using a 1/3 cup measuring cup pour the batter on a griddle or frypan. Griddle should be set to 350F or the stovetop element should be medium/high heat. Cook for about 3 minutes per side. Pancakes should be a light brown colour.
Place the stencil on the pancake and shake some icing sugar on top. Remove the stencil and you have a jack-o-lantern pancake.
