How to make pulled pork in a pressure cooker like an Instant Pot. Simple recipe that uses a pork roast, like a shoulder, blade or picnic, can of pop, BBQ sauce, onion, peppers, celery and mushrooms for a pulled pork full of flavour!

Ingredients
1pork roast (shoulder, blade or picnic)3-5 pounds in size
1onionpeeled and diced
1sweet peppercored and diced
1 1/2cupsmushroomssliced
3celery stalkssliced
3/4cupbrown sugar
1 tbspsalt
1 1/2tspblack pepper
1tsppaprika
1/4tspcayenne pepper
1canpop
1/2cupwater
2cupsBBQ sauce

2cupscole slawoptional
Instructions
Place pork roast in pressure cooker. Place all the diced and sliced vegetables on top of the roast. Top with the seasonings and pour in the pop and water.
Close the pressure cooker lid and make sure that the vent valve is set to closed/sealed.
Set the pressure cooker to cook on high pressure for 90 minutes.
Once the pressure cooker has finished cooking and beeped, let the pressure release naturally.
With oven mitts, lift the pot out of the pressure cooker. Using a strainer, drain the majority of the broth. It is ok if somewhere from 1/2 -1 cup of broth stays in the pot with the pork roast. Place the pot back into the pressure cooker.
Using tongs, take out the pork roast. Remove the bone and any excess fat from the pork meat and using two forks, shred the pork into strands. Place the shredded meat back into the pot.
Squeeze bottle of your favourite BBQ sauce into the pot and stir the pork so that the sauce coats all the meat, mushrooms and other cooked vegetables.
Serve on buns with extra BBQ sauce and cole slaw, if desired.
