Roasted Butternut Squash
Simple instructions for how to roast cubes of butternut squash. This is perfect for as a side, for salads and so many other dishes.

butternut squash

Instructions
Preheat oven to 400F.
Peel and core the butternut squash.
Cut the squash into small equal sized cubes about 1 inch in size.
Toss the cubes of squash in oil and spread on a baking sheet lined with parchment paper.
Bake in the oven for 30-40 minutes, or until the squash is soft and starting to brown on the top and sides.
Remove from the oven and season with salt.
Serve.
