Cut the stem off jalapeño peppers. Then cut in half longwise. Remove all the seeds and membrane from the inside of the peppers.
Place on a baking sheet, cut side down. Make sure to space the peppers so that they are not touching.
Preheat the oven to broil. Place the baking sheet with peppers in the oven and roast for 7-10 minutes. The skin should start to brown and slightly bubble on top of the peppers.
Remove from the oven and immediately place in a large ziploc bag and seal shut. Let the peppers rest in the bag for 20 minutes. This will cause the hot peppers to steam inside the bag and the skin will pull away from the peppers.
Remove the peppers from the bag. Peel the skin off the peppers. Now the roasted jalapeño peppers are ready to be used in recipes.
