Plank Grilled Rocky Road Brownies

Anytime I am preparing a meal outside, I like to do as much of the cooking on the grill as possible. It is a frustration to cook in the kitchen and on the grill at the same time. I find it much easier to do it all in one place and if we are eating out on the deck, I most definitely want to cook everything on the grill. Grilling some foods can be a challenge, especially dessert.

Plank grilling is an excellent way to cook delicate foods on the grill and it works quite nicely for some desserts. This recipe turns ordinary two bite brownies into something spectacular and it is surprisingly simple to make. The two bite brownies are lined up on a wood plank and topped with mini marshmallows, chocolate chips and chopped pecans. Place on the grill running a medium high heat of 450F. Make sure the lid is closed and cook for only about 5-8 minutes. The marshmallows should get all puffy and toasty brown. Serve right off the grill, while they are still nice and warm. Since the brownies are small and individual sized, you can place the plank right in the middle of the table and people can pull the brownies right off the wood plank, with all the gooey topping!

Ingredients

  • 1 wood plank (cedar, maple, etc.)
  • 24 two bite brownies
  • 1 1/4 cup mini marshmallows
  • 1/2 cup chopped pecans
  • 1/2 cup semi sweet chocolate chips

Instructions

  • Soak wood plank in water for 1-2 hours.
  • Heat grill to medium high, around 450F
  • Take wood plank out of the water and let rest for a couple minutes to let the outer wood dries a bit. This ensures that the brownies to not absorb any of the water in the wood, yet still keeps the wood from catching fire on the grill.
  • Line the two bite brownies on the wood plank.
  • In a large bowl, toss the marshmallows, pecans and chocolate chips.
  • Even spread this mixture across the brownies.
  • Place the plank on the grill and close the lid.
  • Grill for 6-8 minutes, or until the marshmallows are toasted and lightly brown.
  • Serve right away!
