Coconut pudding with bananas, almonds and chocolate

The base of this meal is haupia. Haupia is a coconut pudding from Hawaii. It is a favourite at luaus. I made the Haupia today and wanted to give it a bit of a flare. This is the end result. It turned out awesome!

Ingredients

  • 1 can coconut milk
  • 1 cup milk
  • 5 tbsp sugar
  • 4 tbsp cornstarch
  • 1/2 tsp vanilla
  • 2 plain chocolate bars (Hershey, Jersey Milk), divided in half
  • 2 bananas , sliced
  • 4 tbsp shaved almonds
  • powdered sugar

Instructions

  • To make the pudding: pour the first 5 ingredients into a saucepan and cook at a low to medium heat, stirring constantly. Eventually, once it thickens, pour it into a bowl. Place in the fridge until it is cool and firm.
  • Scoop the pudding into 4 bowls. Place one half of a chocolate bar in each bowl. Place half of a sliced banana in each bowl. Pour 1 tbsp of almonds in each bowl. Sprinkle with powdered sugar. Enjoy!

 

Haupia
1 can coconut milk
1 cup milk
5 tbsp sugar

Remaining Ingredients
2 plain chocolate bars (Hershey, Jersey Milk), divided in half
2 bananas, sliced
4 tbsp shaved almonds
powdered sugar

  • I had to bookmark this wonderful recipe. It is very rare that you come across a really good dessert pudding, but with all the additions to the coconut pudding-it is hard to resist. Thanks so much for sharing-yum!
