Coconut pudding with bananas, almonds and chocolate
The base of this meal is haupia. Haupia is a coconut pudding from Hawaii. It is a favourite at luaus. I made the Haupia today and wanted to give it a bit of a flare. This is the end result. It turned out awesome!
Coconut pudding with bananas, almonds and chocolate
Ingredients
- 1 can coconut milk
- 1 cup milk
- 5 tbsp sugar
- 4 tbsp cornstarch
- 1/2 tsp vanilla
- 2 plain chocolate bars (Hershey, Jersey Milk), divided in half
- 2 bananas , sliced
- 4 tbsp shaved almonds
- powdered sugar
Instructions
- To make the pudding: pour the first 5 ingredients into a saucepan and cook at a low to medium heat, stirring constantly. Eventually, once it thickens, pour it into a bowl. Place in the fridge until it is cool and firm.
- Scoop the pudding into 4 bowls. Place one half of a chocolate bar in each bowl. Place half of a sliced banana in each bowl. Pour 1 tbsp of almonds in each bowl. Sprinkle with powdered sugar. Enjoy!
