Cherry Mojito Popsicle
Toronto is in the middle of a heat wave and I am looking for any opportunity that I can to cool off. These boozy popsicles are great patio treat and perfect for a deck party. The freezing point for alcohol is much lower than water or fruit juice, so it is important to make sure that there is the right ratio of alcohol to juice, otherwise your popsicles will never freeze. This recipe has a great ratio, allowing the popsicles to freeze while also giving the great mojito flavors of lime, mint and rum. Blended cherries give these popsicles a wonderful fruity taste to go along with the mojito flavor.
Cherry Mojito Popsicle
Ingredients
- 1 1/2 cups pitted fresh cherries
- 1/3 cup lime juice
- 1/3 cup white sugar
- 1/3 cup rum
- 2 tbsp mint leaves (about 10-15 leaves)
Instructions
- Add all ingredients to a blender and blend until smooth and the cherries and mint are pureed.
- Pour into popsicle molds and freeze until solid (about 3-4 hours)
