Cedar Plank Grilled Salmon with Honey Mustard Sauce

Cooking salmon on the grill can be tricky. This meaty fish requires a lower temperature during grilling to cook through the thicker portions of the fish. Salmon is quite delicate and it can break apart when grilling, especially while flipping. To solve this dilemma, something is needed to protect the fish from the flames and the grill grates.
Cedar planks are an ideal way to grill salmon and one of the most popular methods to cook this type of fish on the grill. The planks provide a barrier for the fish and allows the grill to essentially bake the salmon. The smoke that comes from the cedar gives the salmon nice infusion of smoke flavour. I just love cedar plank grilled salmon and it is a great way to #EATMOREBBQ!!
Make sure that the cedar planks are soaked for a couple hours. This prevents the wood from catching fire, and instead the plank smokes and smoulders during the grilling process. I like to keep a pitcher or glass of water next to the grill. Therefore, in case the wood does catch fire, it can quickly be extinguished.

This recipe uses a honey mustard sauce with herbs. It is sweet, tangy and has lots of flavour. The fresh sprigs of salmon and lemon slices infuse fresh flavour notes into the fish.
Cedar Plank Grilled Salmon with Honey Mustard Sauce
Ingredients
- 2-3 pound salmon fillet
- 1 1/2 tbsp olive oil
- 3 tbsp mustard
- 4 tbsp honey
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp fresh cracked black pepper
- 2 green onions , thinly sliced
- Fresh thyme sprigs
- 8 lemon slices
- Cedar planks
Instructions
- Soak the cedar planks for at least 2 hours.
- Cut the salmon into 4 equal portions.
- Make the sauce by mixing together the oil, mustard, honey, oregano, salt, pepper and green onions.
- Place the salmon, skin side down, on the wet cedar planks.
- Spoon the sauce on the top of the salmon fillets and gently spread the sauce across the top of the salmon. Place a thyme sprig and 2 lemon slices on top of each salmon fillet.
- Preheat the grill to medium so that the temperature is around 350F-400F.
- Place the planks, with the salmon on them, on the grill and close the lid.
- Cook the salmon for about 20 minutes. The time may vary depending on the thickness of the salmon. The internal temperature should be 145F.
