Iced Coffee Popsicle

I love coffee.

First thing in the morning.

Just before bed.

Yes, I can have, and almost always do have, a cup of coffee just before bed. Coffee has never hindered my ability to fall asleep.

Coffee brings me joy.

To satisfy these coffee cravings of mine, I have a bean supplier. My brother-in-law lives with us right now and he works as a barista at a local Starbucks. He gets a pound of coffee a week and, as a result, our supply never seems to end. Only a couple times in the last year or so have I had to buy any coffee. It is a wonderful problem to have.

Over the past two summers I have gotten completely hooked on iced coffee. Years ago, I never used to like it and always complained when my coffee got cold. Lately though, iced coffee has become my drink of choice when the weather is a scorcher. I find it cool and refreshing.

Clearly I am not the only one who has gotten a love for caffeine on ice. Go into any Starbucks, Tim Horton’s, McDonald’s and you will see a selection of cold and frozen coffee drinks that were nowhere to be found 10 or 15 years ago.

I have received many inquiries regarding where I got these molds. I spent a great deal of time searching for the exact type of mold. I knew I wanted a classic popsicle shape that used wooden sticks and went from store to store looking for the perfect shape. It seemed like I would be out of luck, as everything was either round, star shaped or something different. I came home and decided to check online to see if I could order what I wanted. It did not take long as I quite quickly found EXACTLY what I was looking for.

It is the Progressive International popsicle mold and I got it from Amazon. The link from Amazon here to the left. I love it and we seem to always have some new flavour going into these molds.

So, it was only a matter of time that I decided to make an Iced Coffee Popsicle. These popsicles are the easiest I have made so far. They include three ingredients and it is like getting a Tim Horton’s double double and pouring it into a popsicle mold.

I used my absolute favourite coffee – Starbucks Anniversary blend. It was amazing and I will likely try it with some of the other coffee roasts my brother-in-law brings home.

Since making these, I have already had a few of them and they are so refreshing! It seriously tastes just like coffee and is the perfect cool treat to have on a hot summer day!

An iced coffee popsicle that is cool, sweet, refreshing and tastes similar to a Starbucks Frappuccino. Easy to make with fresh brewed coffee or espresso.
Prep Time: 10 minutes
Servings: 10 popsicles


  • 3 cups fresh brewed coffee
  • 3/4 cup half and half cream (10% cream)
  • 1/2 cup sugar


  • Mix all ingredients together until the sugar is dissolved.
  • Pour coffee mixture into popsicle molds
  • Freeze until solid (about 2 hours)

    The only thing I did differently was work with simple syrup rather than straight sugar. Using an immersion blender, it got nice and smooth. Great idea – you’re saving me buckets of money I would be spending on Jonny Pops. No Offense, Jonny. 🙂

    LOVE IT!!! I didn’t follow the recipe I just made my coffee how I like it, froze it, and DELISH!! It was soooooo good. On the hit spring/summer day this is perfect. My whole family loves it!! You don’t need the recipe u just make the coffee how u like it, with extra sugar, so I’m only giving it 2 stars, but the ides was amazing!
