How to Roast Garlic in the Oven
These instructions for roasting garlic in the oven are simple, and the sweet mellow flavour of caramelised garlic is great added to so many other dishes!
Oh my word do I love garlic. I add it to so many dishes I make. I am not alone in this love because if you look at recipes all over the world, garlic is one of the most common ingredients. It is a household staple. Well, have you ever tried roasted garlic? It is sweet and delicious and amazing spread on a toasted baguette slice, cracker, or used in so many other dishes.
What Makes This Garlic So Good?
- Sweet – if you have never roasted garlic, then you are in for a treat. It mellows that sharp bite of garlic and turns it sweet and caramelised.
- Easy – roasting garlic is just a few simple steps and that is it. Once you make them and try a taste, you will wonder why you haven’t done it before now.
- Share the oven – add this dish to the oven while you are roasting or baking something else. The baking dish needed for a few garlic is small and there is plenty of room for other stuff in the oven.
- Use In Other Recipes – adding a few cloves of roasted garlic to different other recipes will truly enhance them and elevate the dish.

Cut The Tops Off
Use a sharp knife to cut the top off the head of garlic. You want to make sure that all the cloves have been revealed and the tips of the heads are cut off as this will allow the oil to coat the tops of the garlic and run down the sides. Discard the top part of the garlic head. Place the prepared garlic heads in a baking dish.
It is important to use a baking dish with a lid. If you do not have one, you could cover the dish with foil, while it is in the oven.
Coat With Oil
Now that the garlic tops have been removed, drizzle the oil all over the tops of the garlic cloves. Make sure that all the cloves get a little bit of oil coating them. The oil will also seep in to the cracks and spaces between all the cloves.
What kind of oil? There are so many kinds of oil out there and many work great with roasted garlic. I have used vegetable, canola and olive oil and they all worked fine.
How Long To Roast Garlic?
It is time for the garlic to go into the oven. Cover the dish with the lid and place in a 375F oven for 50-60 minutes. As the garlic cook in the oven, they will caramelise and turn golden colour. The smell will be incredible!
Once the garlic have finished roasting, take them out of the oven and let them cool to room temperature.
Instead of using the roasted garlic in a recipe, you can also just simply spread some one or two of the cloves on a toasted baguette or cracker. The flavour of the caramelised garlic is just amazing!

- Garlic Mashed Potatoes – The garlic in this recipe is not roasted, but you could easily use some roasted garlic instead to give these mashed potatoes a caramelised flavour.
How to Roast Garlic in the Oven
Ingredients
- 4 heads garlic
- 4 tbsp oil
Instructions
- Use a knife to cut the top off of each head of garlic.
- Place in a small baking dish and drizzle oil on top of all the visible cloves.
- Cover with lid and bake in a 375F oven for 50-60 minutes. The garlic cloves should be nicely roasted with a caramelized colour.
- Remove from the oven and cool to room temperature. They can now be used in different recipes or dishes.
