Oven Roasted Fingerling Potatoes

These roasted mini potatoes are a quick side dish that goes well with almost any meat for dinner. Simple to make, this is perfect for a weeknight meal!

I love potatoes with steak, roast, chicken and so much more. The potatoes can be boiled, mashed, roasted and made into a salad. I love potatoes!! These oven roasted fingerling potatoes are one of my favourite potato dishes and quite possibly the easiest to make.

Fingerling potatoes have quickly become my favourite kind of potato. They are similar to baby potatoes and very versatile. One of my favourite ways to cook these is this Lemon Garlic Fingerling Potatoes recipe. They are so good.

Roasted the potatoes in the oven is also incredible and super simple. Get the potatoes cut and seasoned and then throw them in the oven. Can’t get much easier than that!!

Ingredients You Will Need

This side dish of roasted fingerling potatoes is very simple and uses a few ingredients you likely have in your kitchen.

  • Fingerling potatoeswhile any baby potato will work very well, I love these long mini potatoes. So creamy and delicious!
  • Oil 
  • Garlic
  • Salt
  • Pepper

Expert Tip: While the seasoning for this recipe is simple with just salt, pepper and garlic, it can easily be expanded upon. Some options for additional seasonings include herbs (oregano, thyme, etc), paprika, chipotle, and more!

Cut And Season The Potatoes! 

To get the fingerling potatoes ready to go in the oven, I like to cut them in half. Cut them lengthwise along the long side of the potato. This will provide a bigger surface area which is great for the roasting because it allows more of the potato to be coated in the oil and seasoning.

One the potatoes are cut in half, toss them in the oil, salt, pepper and minced garlic. Then spread them in a ceramic baking dish or baking sheet (lined with parchment paper).

That’s it. Prepping these potatoes for the oven is simple and quick. These oven roasted fingerling potatoes are perfect for a weeknight meal!

How Long To Roast Potatoes?

Preheat the oven to 375F. Place the potatoes in the oven and cook until the potatoes are cooked through and tender. This should take around 40 minutes or so.

Ingredients

  • 1 pound fingerling potatoes
  • 3 tbsp oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 4 cloves garlic , minced

Instructions

  • Preheat oven to 375F.
  • Cut fingerling potatoes lengthwise.
  • Toss the potatoes in the oil, salt, pepper and garlic.
  • Spread the potatoes in a baking dish or baking sheet.
  • Place in the oven and cook for45 minutes, or until the potatoes are cooked through and starting to brown on the edges.
  • Serve.
