Mexican Fiesta Salad Black Bean and Corn

Fiesta Salad

I think that everyone has a ‘go-to’ dish that they regularly make for family reunions, church picnics, pot lucks etc. For some it may be a potato salad, or green bean casserole. For others it might be lasagna or cheesecake.

Well, this Fiesta Salad is what I typically bring to any pot luck or family gathering. I have made it for years and it is often expected that I bring my Fiesta Salad.

The Fiesta Salad is amazing. The ingredients provide a nice Mexican flavour and the comination of cilantro and lime juice give the salad a bright fresh taste. I have regularly refused to give out this recipe to anyone who asks.

Many in my family will actually be surprised to see it on my blog. I give this recipe out with one condition; no one in my family can bring it to a family gathering. OK? 🙂

  • My wife and I love these kind of dishes. Simple and full of flavor. Will have to give this Fiesta Salad a try. What do you think about adding in some diced mangos or peaches?

  • Your recipe for “Fiesta Salad” is very similar to a a recipe “Black Bean Salsa”. Just dip a chip and eat. It’s irresistable. I even eat it as a noon time meal. I’ll submit it for you to try. Makes a large bowlful.
